Perfect little snack for those fast paced zwift races or when you just want to nosh on something delicious by the fire.
Ingredients
- 2 cups quick cooking or old fashioned oats
- ½ cup chopped raw walnuts
- ½ cup sliced almonds
- ½ cup raw pumpkin seeds
- ¼ cup flaxseeds
- 1 teaspoon cinnamon (I use more)
- ½ teaspoon sea salt
- ½ cup creamy peanut butter (or almond butter)
- 1 serving powdered peanut butter (or protein powder)
- ½ cup honey or maple syrup
- 1 teaspoon vanilla extract
- ½ cup unsweetened shredded coconut
Directions
- Pulse the oats in a food processor to break them up.
- Combine oats, walnuts, almonds, pumpkin seeds, flaxseeds, cinnamon and salt in a bowl.
- Combine the honey, peanut butter, and vanilla in a small bowl. If it’s too thick, microwave to gently warm the mixture so you can mix it.
- Pour the peanut butter mixture into the oat mixture. Mix well, until evenly coated.
- Put shredded coconut in bowl.
- Using a small cookie scoop, scoop up mixture, roll into a ball between your palms. Roll ball into shredded coconut.
- Place balls into a container.They will keep for 2 weeks in the fridge or 3 months in freezer. If they last that long.
