Perfect little snack for those fast paced zwift races or when you just want to nosh on something delicious by the fire.


Ingredients

  • 2 cups quick cooking or old fashioned oats
  • ½ cup chopped raw walnuts
  • ½ cup sliced almonds
  • ½ cup raw pumpkin seeds
  • ¼ cup flaxseeds
  • 1 teaspoon cinnamon (I use more)
  • ½ teaspoon sea salt
  • ½ cup creamy peanut butter (or almond butter)
  • 1 serving powdered peanut butter (or protein powder)
  • ½ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened shredded coconut

Directions

  • Pulse the oats in a food processor to break them up.
  • Combine oats, walnuts, almonds, pumpkin seeds, flaxseeds, cinnamon and salt in a bowl. 
  • Combine the honey, peanut butter, and vanilla in a small bowl. If it’s too thick, microwave to gently warm the mixture so you can mix it. 
  • Pour the peanut butter mixture into the oat mixture. Mix well, until evenly coated.
  • Put shredded coconut in bowl.
  • Using a small cookie scoop, scoop up mixture, roll into a ball between your palms. Roll ball into shredded coconut. 
  • Place balls into a container.They will keep for 2 weeks in the fridge or 3 months in freezer. If they last that long.
