An easy and delicious meal that can be eaten as a dinner or a picnic lunch. Personally I cannot eat pork so I intend to try this with a steak to see how


Ingredients

  • 2 Tsp Olive Oil
  • 2 Sweet Potatoes – cubed- leave the skin on
  • 1lb Pork Tenderloin
  • Salt and Pepper to taste
  • 1 cup quinoa 
  • Flavored vinegar of your choice (I like Orange Blossom)
  • 2 Avocados 

Directions

  • Preheat oven – 425F
  • Line flat baking pan w/ foil (you’ll thank me for this step later) and brush with oil. 
  • Toss sweet potatoes in bowl with olive oil, salt and pepper.  
  • Spread out in pan but leave room in center for pork. 
  • Pat tenderloin dry and sprinkle with salt and pepper. 
  • Place tenderloin in center of pan, Should be surrounded by ring of sweet potato cubes. 
  • Bake for 15 minutes.
  • While baking cook the quinoa according to package instructions. 
  • Open oven, stir sweet potatoes and spread out again around pork. 
    Bake another 15 minutes and check your pork – internal temp. should be 145°F.
  • Once done, remove from oven and let pork rest for a few minutes. 
  • Layer serving bowl with about 1/2 cup cooked quinoa. Sprinkle with flavored vinegar. 
  • Chop pork and and add to bowl with sweet potato cubes. 
  • Dice avocado (about 1/2 per serving) and serve on top.
